Wild boar burger (local meat, hooray!) on homemade bun with a slice of tomatillo, some Russian kale, peppers, and pepper jack cheese. Also some "Fake Frites"(Patricia Wells' recipe)! I made the burger on my cast iron skillet. The veggies are all added raw except the peppers and onions which are caramelized. I bake large batches of burger buns (bread flour, salt, yeast, water) and freeze them for easy weeknight burgers.
