In your electric pressure cooker - sauté fresh roughly chopped vegetables that are looking sad in a bit of oil and salt/pepper. I used asparagus, leek, mushrooms in avocado oil. Toast arborio or sushi rice then deglaze with a splash of vinegar to your taste. Add in other veg - like tomato here or mix-ins (I had some leftover black beans and a mustard sauce from cooking chicken) then the water or broth (twice as much as you added rice). Seal and cook for 6 minutes on high pressure, then quick release. Top with a dab of butter if desired and Parmesan or cheese of choice. I used queso fresco made from milk that was about to turn. #notcontest
