a quiche with leftover brussels sprouts! use pre-made pie crust, eggs (6), milk and cream (2 cups of each), whatever cheese you like (i used a cup of cheddar), bacon (or ham or pancetta!), the leftover roasted brussels sprouts, with a good dash of nutmeg, salt, and pepper. whisk the eggs, milk, and spices thoroughly, layer in with the toppings/fillings. bake at 325 until barely set in the middle and nicely browned on top.
