Perch that chicken on a big bed of flavourful veg like potatoes, sweet potatoes, onions and carrots, all loosely chopped. As the chicken roasts the juices will mix and mingle with the veg.
Core and wedge a few bright apples and toss them in as well.
Some cinnamon and a cup of apple cider in the veg.
Then salt and pepper all over the chicken. Roast for about 20 minutes a pound in a 350F oven. No need to baste.
Once it's done start pulling the meat off the the bird and mix the crispy skin and tasty meat with the roasted veg.
