Cauliflower couscous with pan charred spring vegetables is as close one can get to a three-star quality dish in 20 kitchen minutes. Pulse the cauliflower in food processor until it resembles couscous and then sauté for about seven minutes. Now take care of the veggies. Cut off the bottom stalk of the asparagus (it's tough), chop the rest in 1/4 inch pieces. Lightly oil a frying pan and pan fry asparagus for about five min. Take the asparagus out, add fresh peas, fry for three or so minutes. Take the peas out and add the thinly sliced scallion; fry for a minute or two. Throw the veggies on the couscous, season with lemon juice, salt and pepper and enjoy! Happy spring folks! #notcontest
