Apple "Roses." Thinly sliced apples, tossed with a little water and lemon and microwaved for a minute so they're pliable. Line them up on little strips of puff pastry, sprinkle with cinnamon sugar, roll up, and bake (in muffin tins to keep the shape.)

These looked better than they tasted, honestly, but I'm thinking of ways to punch up the flavor a bit (tart apples not sweet, more spices, maybe dot them with butter before baking or splash with bourbon, or do more of a crumb topping?)

I brush rolled out pastry dough with melted butter, then sprinkle generously with a blend of brown sugar, cinnamon, ginger and nutmeg, cut into 1/2" strips, line with apple slices overlapping then roll up and place in muffin tin. Serve in a shallow dish with a dollop of creme Anglais

A salty caramel drizzled over them before baking would make a delicious sticky-crunchy situation at the bottom once they come out of the oven. But use a silicone muffin tray or nonstick baking cups!

I saw these done on "The Chew". They spread apricot jam or something similar on the puff pastry before adding the apples & cinnamon sugar; they also painted the apple roses with it before baking.
