Carrot coins roasted with a paste of cumin, red pepper flakes, chili powder, salt, pepper, and olive oil and citrus halves (use whatever you can find, I had limes and oranges) for about 45 minutes then topped with avocado and a dressing of apple cider vinegar, olive oil and the juice of the roasted citrus ?. This is a big crowd pleaser at potlucks! #notcontest #vegan

You definitely can! I've done both and it's better to let the carrots cool a little while you squeeze the citrus (which will be hot) and cut the avocado
