麻婆豆腐 - toast Sichuan peppercorn. Sauté ground pork. Once browned, add minced garlic, ginger, and scallions. Push aside and toast chili bean paste and fermented black bean paste. Add chicken stock, chinkiang vinegar, soy sauce, sugar, and peppercorns. Being to a boil. Stir in drained, cubed tofu. Reduce. Add slurry of corn starch. Thicken. Serve with rice and pickled mustard greens.
