A weeknight favorite. Chickpea pancakes - equal parts chickpea flour and water, plus salt and turmeric, cook like crepes. Tonight we topped them with lentils, sautéed celery and kale stems with grated garlic and ginger, and tahini dressing (tahini, nooch, lime, salt). And sriracha, always. #notcontest #vegan

Chickpea base looks great. Any directions?

I mix equal parts chickpea flour and water (I normally use 1 1/2 c of each at a time), plus some turmeric and salt. Then heat up a pan (I have a little 6 in one that works perfectly) over medium heat, spray with olive oil, pour in 1/4-1/3 c of the batter, and swirl it around. Cook for 1-2 min on the first side, flip and cook for about 30 seconds more. Hope that helps!
