In pan, sear bacon until crisp; set aside & keep warm. In same pan, sauté peeled and thinly sliced Jerusalem artichokes in bacon fat until tender. Sprinkle with salt, pepper and fresh parsley. Set aside & keep warm. Crack eggs into pan; cook until whites are set but yolks are still runny. Sprinkle with salt and pepper. Serve with fresh fruit.
