Preheat oven to 350 degrees. Lightly cook/ steam all and every vegetable in your fridge. Whisk 8 eggs and 2 cups milk and add cooked veggies and 2 cups cheese and 1 cup cooked quinoa. Pour into casserole dish and sprinkle on more cheese. Bake for 40-50 minutes, until eggs set.
