Parmesan polenta with spinach and roasted tomatoes: cook the polenta and mix in a hefty amount of fresh grated Parmesan cheese, salt and garlic powder. Sauté the spinach with a crushed garlic clove. Roast the cherry tomatoes in the oven at 425 until browned. Combine all in a bowl and enjoy! #healthy #italian #vegetarian
