Southern style polenta soup,made with 1/2 cup of polenta,3 cups of vegetable or chicken stock,1 can of black eyed peas,1 1/2 cups of yellow squash,2-3 tbsp of bottled sofrito,3 cloves of garlic,& 1/4 cup of olive oil. Cook garlic in oil for 1 -2 min,then add squash. Cook for about 3-4 min until squash is slightly softened. Add sofrito & stock. Bring to a boil,then slowly stir in polenta. Simmer for about 10-15min,constantly stirring. Pour soup in bowls & add a handful of spinach. Garnish with chopped white onions, cracked pepper & a little hot sauce. Nom!
