Gorgonzola on well toasted homemade bread and some celeriac rémoulade* make a lovely late winter, all-white lunch, of the five minute variety.
*Matchsticked celery root gets dressed with mayo and/or plain yoghurt (always full-fat for flavour, please) mixed with salt and pepper, lemon juice and olive oil. Chopped parsley or chives would also be nice here, or a grated apple and a handful of walnuts to give it a Waldorf-y vibe, which works so well with the gorgonzola.
And if you add a warm pile of braised lentils (Judy Rodgers’ version, with or without the wine, is wonderful) you can absolutely get away with calling this dinner.
