My first homemade sauerkraut. Just 1 cabbage , 1 1/2 T kosher salt, 1/4 tsp hot pepper flakes, and time (2-4 weeks). My next batch will use 2 cabbages to fill the jar. Will not double the other ingredients.

I added a double bag full of salt water to weigh the cabbage under its juices.
