Traditional pea soup in a pressure cooker is a revelation! Soak 2~cups yellow peas for 2 hours, rinse. Brown a few slices of double smoked bacon or skip and add a chunk of smoked pork shoulder. Add peas, diced yellow onion, bay leaf and enough water to cover by about 1 inch. Pressure cook for 40 minutes. Add diced carrots, celery, fresh thyme, generous salt and pepper. Pressure cook another 15 minutes. Purée half the soup and return to pot. Check the seasoning. Pea soup from scratch in one hour? It can be done! Impressive
