Asian Tempeh Stir-Fry
Just grab whatever veggies you find lying around- in this case it was broccoli, cauliflower, carrots, red bell pepper, mushrooms, and spinach. Throw the tempeh in a medium hot frying pan- make sure there's a little oil or Pam. Then add your dressing/sauce/marinade to the pan- I used Newman's Own Light Asian and a splash of soy sauce. Brown a little bit but not completely because you're about to throw all the veggies in (except the spinach). Just keep cooking and stirring until it's cooked to your liking, then stir in the spinach to wilt and enjoy!
