Add a 1/2 tablespoon of olive oil and a tablespoon of butter to your skillet of choice (I like my cast iron) then crank the heat up and let it get hot. Pat dry and salt both sides of the diver scallops. Once the oil/butter starts to sizzle, add the scallops in and cook 3-4 min per side. They should caramelize nicely. Enjoy with pasta or risotto! #dinner #seafood
