Italian Night with homemade pasta and delicious tomato sauce ?
Pasta - mix these in food processor with dough blade (plastic blade):
2 1/4 cups of all purpose flour
About teaspoon salt
Table spoon olive oil
Form the dough into a ball and knead until smooth. Let it then sit covered for about an hour. Cut the dough into four pieces and roll it out thin. Cut strips of pasta to however thick you want it.
Tomato Sauce -
In a sauce pot heat olive oil with a decent amount of garlic and 1 white onion. Let that cook down then add mashed Roma tomatoes (mush them with your hand). Also add about half a can of the San Marzano crushed tomatoes. Add 2 bay leaves, some red pepper, a little oregano, and a lot of fresh basil. Let it cool down on low/medium heat for about 30 minutes. Transfer sauce to a blender and pulse until it is a little thick. Then throw it back in sauce pot - add a little cream (if desired).
Toss the pasta together with the sauce and serve it with a little fresh basil and parmigiana cheese on top :)
