This is pork tenderloin seasoned with salt, pepper and garlic powder. First I seared each side in a hot pan with some olive oil. In a small bowl I mixed together: plain apple sauce, hickory BBQ sauce, a grated garlic clove and a splash of low sodium soy sauce. Lightly brush on some of this mixture and place on a foil lined cookie sheet and baked at 350 for 1/2 hour or so. I tested with a meat thermometer to check doneness. The rice is Italian rice I cooked in my rice cooker with a can of coconut milk, a bit of water, salt and pepper, and madras curry. Served with some steamed carrots and green beans.
