Cook soba noodles as per packet instructions, drain and leave in cold water while you chop some scallions and cilantro, cut zucchini into small dice, and slice some cucumber. Or use other greens of your choice. Drain noodles again, and shake off excess liquid then toss in a bowl with the prepared vegetables. Scatter some sesame seeds in. Make a dressing with honey, tamari, lemon juice, and a little toasted sesame oil. Toss to mix, then sprinkle with a little more cilantro.
