Use your favorite tart dough recipe (I love a whole wheat crust sometimes). Pre bake the crust for 10 minutes at 350. Sautée a bunch leeks with olive oil and garlic until soft and fragrant. Whisk 3 eggs and a cup of milk, add the leeks once cooled. Pour the mixture into the pre baked pie crust and top with as much gruyère cheese as your little heart desires. Bake for 30 min at 350, you might have to cover the top with aluminum foil if it starts to get too dark. Enjoy!!! The quiche is even better the next day. ?
