Toss raw spinach into hot just cooked short pasta such as orecchiette until spinach begins to wilt. (*Be sure to reserve pasta water) Sauté mushrooms and walnuts with garlic and toss with pasta, add in Parmesan cheese and some pasta water. Sprinkle in bacon pieces. Season with orange zest, salt and pepper and top each serving with a dollop of ricotta and a drizzle of olive or walnut oil. #notcontest
