Cut up cauliflower into florets.
Preheat a skillet over medium heat, add a slick of oil, and start the cauliflower browning.
Add a heaped teaspoon of curry powder, a splash of water, and stir well so the florets are stained yellow.
Once the water cooks off, add 150g cubed chicken breast to the pan with a touch more oil and brown.
Check for seasoning, stir in chopped scallions!
Tastes like aloo gobi but swapping out potato for chicken means you get about 50P and 10F with negligible carb. :)
