Homemade veggie sushi rolls. This only looks difficult! Make fresh to eat immediately. Use nori & spring roll rice wrapper (to hold all better). Use miso paste for spread (adds great salty taste). Prep your veggies: basil leaves, cilantro, sliced tofu, sliced carrots, red bell pepper, avocado, sliced cucumber. All sliced small to fit. Dip one rice wrapper into dish of water quickly. On clean surface, place the barely damp (softened) wrapper down with a tiny lip (for rolling) and add 1 sheet of nori. Line up small amount of basil, cilantro, veggies on 1/4 of edge (imagine it rolled up). Roll tightly. Fold edges in. Cut into bite size sushi pieces. Dipping sauce of choice: Thai peanut chili sauce.
