How to make your whole office drool (not on the food- obviously)

My roommate and I have been on a veggie roast of sorts- and variations. Today is roasted Brussel sprouts in a garlic/s&p situation, with carrots and butternut squash roasted in hot honey. It's accompanied by plain quinoa and a fresh cut avocado. Topped with Mediterranean hummus.

how did you roast the carrots exactly?

Hi Katie! So we washed and peeled the carrots. Then cut them into small rounds and shook them (with chopped butternut squash) in a bowl of EVOO, Mike's Hot Honey, and some S&P. Scattered it along a baking sheet and popped them in at 500 for 15 minutes. We put them back in the bowl and added more honey/salt and shook, then roasted for an additional 15- 20 minutes. Hope you enjoy- they are delicious! ?
