Pear and Blue Blue Cheese Mini Galettes. Peel and finely chop a pear, finely chop spring onions, add 1/2 a block of cream cheese, season with salt and pepper and combine mixture. Save a step and use store bought shortcrust pastry. Cut 3 4-5 inch rounds, re-roll remainder pastry for 4th round. Crumble blue cheese, and set aside. Put ingredients back in fridge to cool while you prepare parchment paper on a baking sheet and make an egg wash. Lay out the pastry rounds scoop a rounded tablespoon of pear mixture in the center, topping with blue cheese crumbles. Gently fold the edges up and in, rotating around to give a pretty, uniform look. Brush on egg wash and sprinkle pastry with a bit of salt. Bake at 375f for 25-30 minutes, or until golden brown.
