Next time you make a Niçoise salad, boil potatoes (20 minutes), eggs (10 minutes) and green beans (3 minutes) all in the same pot before transferring to an ice bath to stop cooking. Then just slice and arrange on platter with butter lettuce, canned tuna, sliced tomatoes and olives. Dress with a lemon vinaigrette.
