Bacon and Brussels Sprout frittata shout out to Huckleberry❤️10 eggs, 1/4 cup creme fraiche, sautéed shallot, bacon and shaved Brussels sprouts, parmigiana, Gruyere. Cut bacon into bite size pieces! Brown in cast iron skillet, remove and sauté the shallot and Brussels sprouts. Remove and set aside. Best eggs seasoned with salt and pepper and the creme fraiche and parm pour into heated skillet moving the eggs in the pan gently, when about a third done add the Brussels sprouts and bacon. Heat oven to 425 sprinkle grated Gruyere on top of frittata and put into the oven to finish about 8 to 10 minutes. If top is not browned nicely put under the broiler for a few seconds.
