Turkey quinoa cups - 1lb of ground turkey, 2 eggs, about a cup or more of chopped spinach, about 1/2 a cup of cooked quinoa, finely chopped sundried tomatoes about 1/4 cup. Mix all the ingredients in a bowl, scoop out into muffin tins, place into oven for about 20 mins at 400 degrees.
Asparagus, Arugula quinoa salad - roast a bunch of asparagus that you cut into bite size pieces and coat them in a little olive oil and salt, place in the oven for 10 mins at 350. This is too soften them up but not make them limp. Then in a bowl, add 3/4 cup of quinoa, about 2 cups of arugula, add in the cooked asparagus and diced sundried tomatoes, about 1/3 of a cup. Add some goat cheese crumbles, I did about a tbsp per serving. Mix it all together and salad is complete.
Dijon vinaigrette - about 3 tbsp of Dijon, 1.5 tbsp of olive oil, and about 2 tbsp of apple cider vinegar. Whisk together until smooth
This is a great recipe for food prep. I placed the turkey muffins in a separate container in order to make microwaving at work easier and keep the salad fresh and chilled.
