Quickly sauté a handful of broccoli and a few strips of bell pepper with maybe some sliced shallot, if you have it. Beat three seasoned eggs with a couple glugs of milk, pour over vegetables in skillet. Top with halved grape tomatoes and cubes of cheddar cheese. Bake in a hot oven (I do mine at 400 -- I know!) until eggs are set and cheese is brown and bubbling. If you like yours more custardy, cook at a lower temp and pull it before you think it's done.
