Everything Lunch, as in using up everything in the fridge before we leave for spring break tomorrow. Fried up some falafel (shaped & froze rest for when we come back) & made a slaw from broccoli stalks & carrots (chopped & froze the florets for a later use). Dressed the slaw with a quick, let’s just wing it dressing: dollop of homemade plain yogurt, few splashes red wine vinegar, smidge of honey, salt & pepper. So satisfying, and feel content knowing I’ve done a stellar job using up all of our leftovers this week. Only made a grocery run for fruit, milk & eggs earlier in the week. Now, I wonder how long tahini lasts, or if I can freeze it… #foodwaste #wastenotwantnot #findersfeast
