Throw some garlic into a pan and add the shrimp. Cook on each side for about a minute and then add chicken broth, lemon, salt and pepper. Throw in the sliced mixed veggies (I get them already cut from the store but it includes onion, red pepper, zucchini, carrot, and squash) and a little butter and cook for about 2 minutes or until the shrimp are cooked and the veggies are just softened! So easy! #notcontest #shrimp #dinner #healthy

I never understand recipes that tell you to start cooking shrimp before veggies.

I prefer the veggies to be just barely cooked so if you start with the veggies they will be way over by the time you add the shrimp. So to remedy that, I par cook the shrimp and then add the veggies. Since they are spiralized they only need a minute or two to be to flavorful but still have some crunch. And since you add stock in the pan with the veggies once you've parcooked the shrimp, the shrimp cook much slower. Works every time, I've never had overcooked shrimp.
