French Green Lentils, Shiitake Mushrooms, Yellow Onion & Garlic
Sauté onion and garlic in olive oil
Add the shiitake and brown
Reduce w/ coconut vinegar
Add rinsed French lentils
Let all moisture evaporate
Add 2 cups water and simmer uncovered until all liquid is absorbed
Remove from heat, season w/ sea salt and cover.
Stir and serve.
