Gluten free deconstructed eggplant parmigiana. Roast halved eggplants, cut side down for 30minutes. Sautéed chopped onions, garlic, mushrooms, bell pepper, Roma tomatoes and basil. Scoop out eggplant, leaving skin as shell. Add scooped eggplant to veggie mixture. Add grated parm, to veggie mix, off the heat. Fill the eggplant boats with veggies and top with fresh mozzarella. Bake until cheese melts
