Sauté 1 cup of spinach with 2 chopped leeks in a pan of olive oil for about 10 minutes or until the veggies are super soft. Add salt, pepper, and a squeeze of lemon juice. Form mini pizzas from pre made dough and bake in over for about 5 minutes or until they start to brown. Spoon the veggies onto the dough and top with sliced mozz and bake until the cheese bubbles golden brown and dough is cooked through. Top with sliced basil and more lemon juice, and sprinkle on Parmesan cheese.
