Rama Style Chicken

Chicken cutlet, pounded and cut to preferred size

Marinate:
Toasted Sesame oil
Rice wine vinegar
Sriracha
Low sodium soy sauce
Fresh lime juice
Salt & pepper

Sear chicken in hot skillet until cooked through.

Meanwhile, prepare the sauce:

Peanut butter (I use extra chunky)
Coconut milk
Sriracha
Fresh lime juice
Low sodium soy sauce
Fresh chives or scallions

Add 1/4 sauce to the chicken and heat through in skillet.

Serve hot or cold
