So first I fried the basmati rice and mung beans in ghee with a couple of cinnamon sticks, cardamom, bay leaves and cloves and some onions and a pinch of turmeric. Then cooked it like normal rice.
The egg curry was super easy too. First I made the curry sauce which is basically a few tablespoons of onion, ginger and garlic paste with the same spices as above - so a few cloves, cardamoms, cinnamon sticks, bay leaves, a teaspoon of turmeric. Simmered that till it smelled amazing! And then added some chopped tomatoes and boiled eggs. Cooked it till the eggs have soaked up all the yummy curry sauce.
