Parchment paper and sheet trays make life in the kitchen so much easier. No peel, turn a sheet tray over, slap down parchment, and slide those loaves easily into the oven. My favorite cookbook this year and maybe even of the last five, Hot Bread Kitchen. Sarah I have had many starters. Nancy Silverton's La Brea Bakery starter is still my favorite. I started with hers almost 12 years ago and still have some tucked away in the back of my freezer. I haven't made sourdough in a long time because I don't have the schedule I used too. Sourdough, as we all know, is a commitment, sometimes even more sometimes then a healthy relationship. So while I broke up with my starter a while back I still have hopes of getting back together someday. Alice Waters cheats a sourdough by letting her preferment hangout in the back of the fridge until it gets good and champagne-y smelling. I use her method a lot and while it's not as pungent it still has great flavor.
