Russet potato wedges sliced (with or without skin) baked with a tbsp or two of olive oil on a baking cookie sheet
Preheat 400 degrees for 15-20 minutes
Add cheeses of your choice.
I used melty mozzarella with some Colby jack.
You can melt your cheese by sticking these in the microwave for about 45 seconds on high.
Add salt and or pepper as desired.
