Sautee shallots, red peppers, soyrizo in olive oil. Add a little tomato water for moisture and sweetness. Add roasted or boiled sweet potatoes seasoned with smoked paprika, salt and pepper. Top with roasted cauliflower, tomatoes, avocado, scallions, watermelon radishes, and a poached egg.
