Yes, it's THAT week of the year. The week after spring break. And I spent mine in New Orleans eating more beignets than I'd like to admit. So it is DIET week. And this is what I thought for a quick healthy diet-y lunch today. Grilled chicken tenderloins that I had previously tossed in a spice mix of paprika, oregano, garlic and onion powder, salt and pepper. Some steamed broccoli and a pretty hard boiled egg. A little tiny little drizzle of extra virgin olive oil on my brocoli to make it (and me, and my arteries) happier.
