Coconut ginger fried rice. Heat a spoonful of coconut oil in a small skillet. Add a small spoonful of chopped ginger, a chopped garlic clove, chopped small carrot and sliced scallion. Sauté until golden and add about a cup of cooked rice. When rice is heated through add 1 egg, a dash of coconut aminos and a dash of tamari. Scramble and cook for another minute until egg is cooked. Serve with sliced scallions, toasted pumpkin seeds and avocado. #notcontest
