Peel and chop up ginger root and add to chopped #scallions. Place in a bowl, sprinkle over some sea salt, splash of tamari or soy sauce, along with a drizzle of rice vinegar. Heat enough sunflower or other neutral oil to cover the ginger and scallions. When hot, pour the oil over the #ginger scallion mix - be careful, it will sizzle.
Shred cabbage, carrot and cook some #soba noodles. Combine the shredded #veggies with the cooled soba and pour over the #gingerscallion mix. Toss to coat and there you have one of my favorite #vegetarian #vegan #salad
