Plantain, raisin and coconut cookies!

Mix 3 cups oats, 1 cup spelt flour, 1 cup coconut, 1 cup raisins, 1 tsp salt and spices(I used 2.5 T cinnamon, 1.5 tsp nutmeg and 2 T mixed spice)

Combine with 2 plantains, 1 cup apple juice and 2 cups dried fruit (I used raisins and blueberries) in a food processor and process for 3-5 minutes until smooth

Stir wet into dry, adding more apple juice until you get a good sticky dough. I added more for sure!

Roll into compact balls the size of a golf ball and flatten slightly with the back of a soon.

15-20 minutes at 350 = dairy and sugar free hippy cookies. So good for breakfast or a snack!
