Itialian Sausage Soup
Soup ladle (for serving)
Heat 1 tsp. of olive oil in a large saucepan on medium-high heat. Add 1 lb. of Italian sausage, 1 chopped onion and two cloves of chopped garlic cook for 10 minutes stirring frequently(garlic burns easily).
Next add 1 can of stewed tomatoes(undrained), 1 can of cannellini beans(rinsed), 2 cans of reduced sodium chicken broth, 1 soup can of water bring to a boil then add 1 cup of rotini pasta(uncooked 1 cup of pasta is enough I promise). Cook on medium heat for about eight minutes or until pasta is tender.
Remove from heat stir in 1-1/2 cups of baby spinach(the heat will wilt the spinach a little). Cover and let stand for 5 minutes
Sprinkle mozzarella cheese on top (optional) or saltine crackers and enjoy!!!?
