Fully coat carrots with coconut oil and place them on the baking sheet. Season with sea salt and a generous pinch of smoked black pepper, rolling the carrots to ensure all sides are seasoned.
Transfer carrots to the oven and bake for 30 minutes. Turn the carrots 15 minutes in to ensure all sides cook evenly. Remove from oven when they are delicately soft and slightly charred.
Drizzle carrots with honey and add an extra pinch of smoked pepper for added smokiness. Transfer to a serving plate and serve immediately.
