Everyday bread. 430g flour, 345ml water, 8g salt, 1tsp yeast. Mix. Let stand 12-18 hours, or more in the fridge. Shape, let rise for 2 hours. Bake in a cast iron pot for 30 minutes at 450°, then uncover and continue baking for 15 minutes.

I use the same recipe ... I add chopped calamata olives and grated jarlsberg cheese to the flour before adding the water ... Heaven
