When the Macaroni and Cheese craving hits (which is often), this is my go-to for a quick homemade version! Boil water with 1/2 lb. pasta of choice until al dente and drain. Return cooked pasta to same hot pot, with heat on medium low. Add 1/4 cup milk, a sliver of butter, and 3/4 cup freshly shredded cheddar cheese. Stir until cheese is melted and ingredients are incorporated. Sprinkle with kosher salt and freshly ground pepper, and feel free to eat right out of the pot!
