For the pancakes I used this perfect recipe of Jamie Oliver:
3 large free-range eggs
115g plain flour
1 heaped teaspoon baking powder
140 ml milk
1 pinch salt
Just separate the eggs, whip up the egg whites with salt until it's stiff. Mix the other ingredients with the egg yolks. Then fold in the egg whites.
Bake the pancakes in a pan without butter or oil, you'll get the best result.
For the toppings I used: Greek yoghurt with some vanilla sugar, home-made lemon curd and some fresh raspberries.
